The Riverside Cafe are delighted to host Guest Chef Takashi Miyazaki, named ‘Chef of the Year 2015’ by The McKenna’s Guide. With over 20 years experience, including catering for heads of state and celebrities, Takashi’s authentic Japanese food, prepared according to the traditional ‘Washoku’ cooking culture of Japan, (which is listed as a UNESCO Intangible Cultural Heritage) is not to be missed. At the heart of this cuisine, and of Takashi Miyazaki’s cooking, is dashi broth, which he makes each morning from Kombu seaweed. Dashi is the very essence of umami, the fifth taste, which translates into English as ‘yummy deliciousness and a pleasant, savoury taste.’ This is an evening not to be missed!
